Weekend Things + Meals for the Week 3/3

gooood morning!

how was everyone’s weekend?

some notes about my weekend..

Friday night I went out with friends, Saturday morning I woke up feeling less-than stellar, and Saturday night I cooked dinner for my little and g-little (sorority lingo..basically just my friends :) )

for dinner saturday night I made homemade guac, a salad, and a version of this skillet enchilada bake. The only changes i made were not making it vegan (i added cheese) and i used jarred enchilada sauce from TJ’s because I’m lazy

i also took a trip to Trader Joes on Saturday in an effort to do something productive with my day but it was probably the worst time to go..it was PACKED. I think because it was a Saturday afternoon and with the impeding snow storm (which I have a snow day for today WOO) but it was insanity. Too much for my hungover self to deal with but I tried to make the trip as speedy as possible

here’s some of the goodies i got


some of my favorite TJ’s condiments: simmer sauces, enchilada sauce, and chipotle salsa


cheeeeese. I used some of this for my enchilada skillet. Great choice.


some yummy snacks. i’ve tried all but the pita crisps before..they were an impulse buy but I think they’ll be worth it :)


and my favorite hummus evaaaaa.


Sunday was filled with food prep, a career fair, and a quick gym sesh

Sweet Potato Crusted Goat Cheese Quiche

Sesame Ginger Salmon with Stir Fried Veggies

Kale Salad with Lemon Vinaigrette

Falafel with Spicy Feta Yogurt Dip

For prep yesterday I made


the sweet potato crusted quiche, the baked falafel with spicy greek yogurt feta dip, and some roasted sweet potatoes.


for the quiche i used this recipe with just a few modifications. I added in a little bit of plain greek yogurt instead of sour cream (about probably half the amount) and i sauteed up some garlic and leeks with some goat cheese. So nom!

i had a piece yesterday for a snack post gym


with some sriracha on top of course.


i also made how sweet eats baked falafel with spicy greek yogurt feta dip. This recipe was so easy and while it may not be the prettiest, its certainly delicious. i had some for dinner last night. I could seriously eat that dip by the spoonful..and maybe i did..


today is a SNOW DAY. I spent last snow day at the bar all day, but considering I have some school work to do I think today’s snow day will be a little more uneventful
