yesterday was a very special day..it was a SNOW DAY. No finance class for this gal..WOO HOO. My professor says he’s going to try and schedule a “make up” class, but lets all pray that doesn’t happen
We spent a lot of the day on the couch (per usual) watching breaking bad episodes. My roommates and I just started watching the series and we are hooked! I think we watched about 7 or so episodes yesterday..yikes.
tv marathons are what snow days are for though..right?

this was actually my breakfast from Monday, but since i forgot to snap a pic of yesterday’s breakfast (oatmeal) lets just use this one! I made a cereal bowl with the last of trader joes oatmeal flakes, 1/4 cup raw oats, 1 tbsp peanut butter, 1/4 cup dried superfruit mix, and half a banana. Such a good combo!
quinoa kale salad I prepped on Sunday with a small piece of leftover salmon
lunch part two was a small snack plate of grapes, goat cheese, and dried figs (from costco..they are the BOMB)
followed by breaking bad, breaking bad, breaking bad + a work out
sorry for the heinous picture, but I snacked on some hummus and carrots while prepping dinner. That hummus is from costco and it tastes like heaven.
salad and pizza night! i made a big spinach salad with avocado, carrots, scallions, tomatoes, and bell pepper with a honey dijon dressing
and cauliflower crust pizza (using this recipe) topped with caramelized onions and mushrooms, goat cheese, and mozzarella cheese
SO good. It would of helped if I used parchment paper because the pizza kind of stuck to the pan, but it still tasted delicious regardless
