how was everyone’s weekend?

I don’t really have any pictures to share with you all from my weekend but it was pretty uneventful. I went out Friday night, bummed around Saturday (may or may not of gotten a Mcdonalds egg mcmuffin for breakfast.say whattt?), and stayed in last night to watch the Patriots game.

I also made a delicious simple dinner Friday night I posted on Instagram (chelcieross) <- follow me! :)



It was a semi-homemade lentil curry thanks to help from my pal Trader Joe

i just sauteed up 1 shallot, 2 cloves garlic, 1 pint sliced mushrooms, 2 bell peppers, and about 3 cups of baby spinach in a little olive oil. Once everything was nice and cooked down I added in 1 package of Trader Joes pre-cooked lentils, 1 jar of Trader Joes yellow curry simmer sauce, and 1 jar of trader joe’s traditional curry simmer sauce. I let it all simmer for about 15 minutes and then voila! Served over some brown rice was sriracha. amazeeee


ugly food tastes the best..remember that ;) I will definitely be making this again

Homemade Veggie Burgers with Roasted Sweet Potatoes and Roasted Brussel Sprouts

Cabbage and Parmesan Rind Soup

Noodle-Less Pad Thai with Teryaki Salmon

Stuffed Peppers with Whole Wheat Cous Cous and Avocado Sauce

I roasted up some sweet taters and brussel sprouts with olive oil, salt, pepper, and red pepper flakes at 375 degrees F. 30 minutes for the brussel sprouts and about 40 minutes for the taters


veggie burgers made from a recipe out of the Sprouted Kitchen cookbook. i’ve made these once before and I’ve been dying to make them since..they are SO good. They aren’t the prettiest looking things, but like I said, ugly food tastes best :)

i also chopped up some bell peppers and a cucumber to have as a salad mix-in or snack. (i then proceeded to slice my thumb and nail pretty badly..I was going to share a picture but I thought I’d save you all from the grossness ;) )



lunch today was a veggie burger salad with some peppers and cucumber, a veggie burger, tomatoes, and jalapeno greek yogurt dip from dressing.



I can’t believe I’ve only been here for a was quite an eventful week filled with way too much drinking. This week will definitely be a calmer hah


I’m off to the gym to start the week off on the right foot
