good morning!

One of my favorite aspects about my blog is sharing recipes I’ve created along with ones I’ve tried from other blogs.

2013 was a delicious year.

In my opinion, there is nothing better than good, homemade food :)

i’m sharing 13 recipes i’ve shared and loved from my blog, as well as 13 recipes I’ve tried over the past year. All 26 recipes are DELICIOUS. I hope you give them a try and let me know what you think :)

Vegetarian Paella – this dish was inspired by a recipe out of my new cookbook. It takes a little elbow work, but the result is amazing. its a great dish for entertaining :)

Pesto, Roasted Portobello Mushroom, and Pimento Pepper Quinoa Salad- The perfect summer salad! Homemade pesto makes this dish over the top good

Lentil, Quinoa, Pimento Pepper, and Goat Cheese Salad with fresh basil -this is by far one of my favorite recipes. Something about the combination of goat cheese, pimento peppers, and lentils…its so, so good. and good for you!

Easy Greek Chicken Skillet- this dish is not only easy, but packs a lot of bold flavor in a short amount of time. Love !

How to make Delicious Sweet Potato Nachos- sweet potatoes are roasted in thin slices to create the “chip” affect. these are awesome!

Vegetable Spring Rolls with 5 Ingredient Spicy Peanut Sauce- light, refreshing, healthy, and delicious. the 5 ingredient spicy peanut sauce is what really makes these rolls phenomenal

Thai Soba Noodle Salad- spicy, refreshing, and delicious! i love making this to have on hand for easy lunches. It tastes even better the next day!

Mexican Sweet Potato Bowls- this is my brothers favorite recipe. It is similar to the sweet potato nachos, except the sweet potatoes and diced and topped with a quick vegetarian chili. Definitely a crowd pleaser!

The 5 Ingredient Banana Bread Pancake- this breakfast is so delicious and so filling. And I promise..it really tastes just like banana bread! the key is a super ripe banana as the base

Cauliflower Chicken Fried Rice- cauliflower turned into “rice” makes this dish super healthy and super delicious.

Roasted Vegetable and Lentil Salad- This is the perfect summer side dish to be paired with chicken, fish, or steak. Yum.

Easy Mediterranean Farro- Farro is such a fun and hearty grain. this dish tastes delicious both hot and cold.

last but not least..my favorite pumpkin oatmeal..I’ve perfected my pumpkin oatmeal considering I’ve had several batches for breakfast :)
