after a very indulgent, yet absolutely amazing, weekend..I’m ready to get back to a week of healthy eating
since Trader Joes was on my way home from dropping my Mom off at the airport, I made a little pit stop to pick up some of my favorites (and then some!)
I got a little carried away..and that was me trying to be modest!! oh Trader Joes..
I mean how could I resist?! It was hard enough resisting buying every single type of goat cheese they have..
a couple of my favorite hummus dips
and stocking up on my favorite snacks. I forgot how amazing the peanut butter filled pretzels are..BAH.
On the menu this week!:
Creamy Curried Butternut Squash and Sweet Potato Soup
Quick Vegetable Curry
since I was cutting up squash to make the soup, I went ahead and cut up both squashes to get the dirty work out of the way..so the butternut squash enchilada skillet will come together in no time at all
I had some of the lentil quinoa salad for lunch yesterday..I love the pimento peppers in it!
the soup turned out so well! I will definitely be sharing the recipe!
