wanna know what POIAJ stands for?
Pumpkin oats in a jar! Lindsay and I managed to polish off this jar in a week..:) There was still a decent amount left at the bottom of course because thats the best part of eating oats in an “almost empty” nutbutter jar
i topped my oats with a little piece of crumbled pumpkin bread and pumpkin butter. deeeeeeeelish
a big bowl of greens. Under the cucumbers, tomatoes, salsa, and peppers was curried tuna salad. It takes a while to eat that many vegetables let me tell ya!
a tofu spring roll dipped in spicy peanut sauce. SO good. I love fresh spring rolls!

and snap pea crisps that somehow missed the camera
i experimented and made tofu mushroom lettuce wraps. I decided I would of liked the tofu stir fry better over some brown rice or quinoa instead of lettuce..it was kind of messy to eat. So next time I make the tofu stir fry I’ll share the recipe
I had a piece of pumpkin butter heated up and topped with some peanut butter for some carby substance after dinner
i wish I had more chocolate chips to put in the pumpkin loaf..but its still delicious nonetheless
