my first batch of pumpkin overnight oats! In the mix went: 1/3 cup oats, 2 tbsp plain greek yogurt, 1/2 tbsp chia seeds, 1 scoop vanilla protein powder, 1/2 sliced banana, and 1/2 cup almond milk. Topped with pumpkin granola and some bluebs. Devineeee.
A cliff bar in between classes. I thought I liked cliff bars but I don’t think I’m a fan of them..they taste too “fake” to me.

I went to make these black bean, zucchini, and goat cheese enchiladas. However, my corn tortillas were giving me some difficulties and kept breaking in half when I tried rolling them up, so I improvised and made it more of a enchilada “bake” with a layer of enchilada sauce on the bottom, a layer of corn tortillas, all the filling, more corn tortillas on top, more enchilada sauce, and baked!
it was amazing!! I can’t wait to have the leftovers for lunch today..I’m also definitely going to try some new combinations and hopefully share a recipe soon
