WIAW-Buffalo Chicken Cauliflower Pizza

good morning! Happy WIAW!

Breakfast

This is embarrassing to admit but I’m going to tell you guys anyways because I find it comical. I look forward to eating the same breakfast every morning. I look forward to eating this breakfast again right after I finish eating it, at lunch, and dinner, and I dream about it. HOW SAD IS THAT.

It’s so simple but so good. Egg white oats with peanut butter. 1/3 cup oats, 1 tsp cinnamon, 1/2 packet truvia, 1/2 sliced banana, 2/3 cup water. Microwaved for 2 minutes. Then I add in 3 tbsp liquid egg whites and microwave for another 1.3 minutes. Topped with a BIG scoop of peanut butter

Jiff peanut butter gets SO melty..As I’m writing this post all I want is some oatmeal with peanut butter…story of my life

Snack

Lunch

I made myself a wrap with chicken, hummus, avocado, spinach, goat cheese, and a couple sundried tomatoes. With some grapes and sweet potato chips on the side. Hit the spot I was so hungry!

Dinner

Buffalo Chicken Cauliflower Crust Pizza! I’m obsessed with all things buffalo so I was in love with this meal. I used this recipe for the crust and just tossed some shredded rotisserie chicken with franks buffalo sauce and topped the pizza with some mozzarella cheese. YUM.

Dessert/Snack

My obsession lately. Cereal mug. Trader joes oatmeal flakes + a little special k chocolate and strawberry with almond milk. Its even better with chocolate almond milk but we’re all out :(

I am the exact same way with oatmeal. Literally go to sleep in order to wake up and eat it the next day, lol. And spring break is going to make your 21st come up so fast! That’s how it was for me, at least.

I am so glad that the cauliflower pizza crust turned out well for you. I am such a fan!! I love your idea of using buffalo sauce, too. I might have to concoct a vegetarian version..yum!

Egg white oats are the best!! I can’t eat regular oats now!! I eat the same thing for breakfast every morning too! If it ain’t broke don’t fix it!! LOL And that pizza looks amazing!!! I will be trying it out!!

I’m the same way with overnight oats! Every time I switch it up and have something different for breakfast, I start wishing I had my beloved oats!
