good morning!
my first WIAW since being back in the states!
For those of you who don’t know I was just studying abroad for the Month of January in Australia and New Zealand. I wrote a lot of recap posts about my travels that start here and so far end here. Still one more to write!
the month of February is another love your veggies month for WIAW. I have a delicious veggie packed recipe at the end of this post!
onto yesterday’s eats!
Breakfast
I’ve been loving hot oats for breakfast lately
same bowl every morning so its okay that I recycled this picture
In the bowl went 1/3 cup rolled oats, 1/2 sliced banana, cinnamon, 3 tbsp liquid egg whites, and 2/3 cup water. Topped with peanut butter and a little pumpkin butter
In case anyone is curious here is my method of microwaved fluffy oatmeal:
- Mix together the oats, banana, cinnamon, and water. Microwave for 2 minutes
- Stir after two minutes and add in the liquid egg whites. Microwave for an addition 1.30 minutes, until the oats look really puffy (meaning the egg whites are fully cooked)
- whip together and top with desired toppings
(I promise you don’t taste the egg whites..Its a great way to add some extra protein into oatmeal and it also makes the oats more volumous)
Lunch
Leftover turkey chili with some added brown rice and avocado. Post picture. sriracha overload
I also ate an orange a little while after
Snackage
these almonds are SO GOOD. I am obsessed with anything buffalo flavored so I knew when I spotted these in the grocery store I would probably be a fan. I was right. They’re awesome.
Definitely recommend trying these!
Another new to me find..Chobani bites! While being abroad I kept up with blog reading for the most part and noticed these cute little yogurts popping up on everyone’s blog. I was so excited to finally try them!
Love love love. I don’t know if I’ll make a habit of buying these (just because my roommate and I like to buy big containers of plain chobani) but its a delicious treat. If I spy the coffee with chocolate bites I will definitely be picking them up!
Dinner
A new recipe to share! Why do so many delicious foods in this world look the worst? I know we are suppose to eat with our eyes first and then our stomachs, but just close your eyes for me and try this recipe! It is so good and so simple!
Crock Pot Thai Sweet Potatoes and Lentils
Servings: 4-6 main course
Prep Time- 20 minutes ( inactive time, 8 hours)
Ingredients:
- 1 medium yellow onion, diced
- 2 carrots, peeled and chopped
- 2 medium sized sweet potatoes, peeled and chopped
- 2 cups dry lentils
- 1 can light coconut milk
- 1 14.5 oz can diced tomatoes
- 4 cups (32oz) chicken or vegetable stock
- 3 tbsp curry powder
- 1 tbsp cumin
- 1 tsp cayenne pepper
- 1 tbsp paprika
- 2 bay leaves
- 1 tsp salt
Instructions:
- place all ingredients in the crock pot.
- Cook on low for 8 hours or on high for 6 hours.
- Serve warm.

This is a super healthy, simple, and delicious recipe! Feel free to add extra sriracha sauce mid way through the meal like I did tonight
This dish makes for great leftovers, and I find that it even tastes more flavorful the next day!
After all those veggies I needed something sweet to finish..its all about balance people! I ended with a small piece of dark chocolate

Sigh… I wish they sold those yummy blue diamond flavors & chobani here in Kuwait. I guess until I make my visit to the states in March I’ll just have to live through you
