Recent Eats + Meal Prep

hi!

happy superbowl sunday! what is everyone doing for the superbowl?

I’m not a fan of either team so I’m just having a pot luck dinner with some of my friends. I’m in charge of bringing the turkey chili!

This morning I forced myself to get up early and be productive

My meal prep for the week included a batch of roasted veggies and quinoa

A very green batch: In the mix was 3 zucchini, a bunch of asparagus, 2 green bell peppers, and half an onion. Roasted at 375 with some olive oil, salt, and pepper for 45 minutes I love making a big batch of veggies to have for the week to go with easy meals such as salads and eggs. Or eaten plain with lots of sriracha! :)

For the quinoa I made 1 1/2 cups dry quinoa. To the quinoa I added sauteed mushrooms and spinach, feta cheese, a can of chick peas for added protein, and a couple tablespoons of pesto

this will be great to have on hand for lunch this week or just as a quick snack!

i hope I can keep up the weekly meal prep even with my insanely busy schedule this semester because it will make sticking to a healthy, clean diet a lot easier

my first night home my friends made me cauliflower crust pizza! I helped a little in the making process. I’m not sure where my friend got the recipe from but once I find out I’ll let you know. It was delicious! Definitely doesn’t taste like real crust but it tastes delicious.

We decided we made the crust too thin because it was falling apart a bit. But it still tastes just as good! We did pesto, mushrooms, chicken, and mozzarella cheese for toppings

Nom! I will definitely be making this again!

This mornings breakfast was a mushroom and cheese omelet with 2 eggs and 1 egg white. Topped with sriracha of course. I have a serious love affair with sriracha..I’m just so obsessed.

Last night we made a thai chicken cashew quinoa recipe..It was delicious! Once again my friend Lindsay has the recipe so once I get it from her I’ll share it with you!

And for my first lunch home I caved and got Chipotle. ITS SO GOOD BAHH. I got a salad with 1 scoop of brown rice, chicken, black beans, hot and corn salsa, and of COURSE GUAC!! I love how much guac they give you. love love love it.

So here’s what the meal plan for the week looks like!

  • Sunday: Turkey Chili
  • Monday: Crock Pot thai sweet potato and Lentils (hopefully sharing the recipe!)
  • Tuesday: Spaghetti Squash + Mom’s Sauce!
  • Wednesday: leftovers
  • Thursday: Fancy Annie’s Mac + Cheese w/ chicken and peas
  • Friday: Leftovers/out

and as far as work outs go..I’m hoping to get in as many quick work outs as possible because I have a busy next couple of weeks with LOTS of recruitment practice and classes starting tomorrow

I’ve done this work out a lot of times before and I love it every time!

I also want to try the winter shape up work outs from the fitnessista

As I just said classes start tomorrow. NOOO PLEASE NOO. I hope I’ll be able to keep up with blogging this semester but I’m not going to lie its going to be tough. This is by far my busiest and hardest semester yet so I hope I’ll be able to balance it all!

Time to go continue watching the puppy bowl

yup. puppy bowl. definitely way better than the super bowl in my opinion

my roommates and I need to get treated for our dog obsession..

There are seriously so many good looking and sounding eats here that I don’t even know what to comment on!! ;)

Cauliflower pizza crust is the bomb! I absolutely LOVE it!

Your quinoa mixture that you prepped for the week sounds delicious. That is a really great idea for a quick and easy meal.

I am extra excited for you to hopefully share the Crock Pot Thai Sweet Potato and Lentils recipe. That sounds amazing and like something I would absolutely love.

Oh man, all of your meals look pretty freaking awesome!! Tonight we are having spicy black bean burgers. I can hardly wait to dig in already!!

BAH so much good food! I have been wanting to try cauliflower crust pizza forever. I’m glad you liked it! I totally understand about the recruitment busy-ness…we just finished up last Sunday. Most exhausting two weeks of my life – but also the most rewarding. I hope you get some awesome new Alphas!

you just made me hungry, that all looks so good! I am planning on making a crock pot chicken vegetable soup on Wednesday for when my mom comes into town!
