good morning!
I can’t believe its already October
this month’s WIAW is all about sharing healthy halloween treats and spooky snacks
I’m not a fan of halloween (sorry to kill the buzz) but I do love October because of everything pumpkin and apple inspired!
many of mine include pumpkin, but I am also a sucker for fall apple dishes
like my apple loaf and apple cake
and pumpkin butter overnight oats and pumpkin green monsters ..or you could pin pumpkin recipe after pumpkin recipe on pinterest like I do:)
Breakfast
I kept it simple with breakfast yesterday: 1 whole wheat english muffin with maple almond butter, 1/2 a banana, and pumpkin pecan butter
so simple, yet SO good.
I also had 2 cups of coffee..per usual.
Lunch
since it was a dreary rainy day yesterday (it rains EVERy tuesday in delaware..in case you didn’t know) I was in the mood for something warm and cozy for lunch
enter egg and veggie scramble: I sauteed some mushrooms, tomatoes, spinach and zucchini in a pan and added in 1 egg, some egg whites, american cheese, and half a cooked sweet potato (its buried under there I promise)
topped with avocado and sriracha and I was a happy camper
I also burnt my mouth numerous times eating this because I was kind of in a rush but whatever it was worth it
Snack
I was at the coffee shop studying and ate a handful of almonds and the juiciest honey crisp apple ever.
and then right after that i was still starving so I bought a chobani
I was so tempted to buy a bag of goldfish and stress eat the whole thing..but I obviously went for the healthier option
ugh why can’t goldfish be good for you?!
Dinner
staying with the warm and cozy theme I went with a soup and salad combo for dinner
I had a salad with mixed greens, turkey, goat cheese, snap peas, tomatoes, carrots and italian dressing
earlier yesterday morning i whipped out the crock pot and took about 10 minutes to have dinner ready and waiting for me 8 hours later
Crock Pot Lentil Soup
Servings: 6-8 cups
Ingredients:
- 2 cups lentils ( i used green but any color works)
- 1 small white onion diced
- 3 celery sprigs, chopped
- 2 carrots, peeled and chopped
- 1 medium sweet potato, peeled and chopped
- 1 red bell pepper, chopped
- 1 tbsp ground cumin
- 1 tbsp curry powder
- 1/2 tsp cayenne pepper
- 1 bay leaf
- 1 tbsp salt
- 1 tsp pepper
- 4 cups chicken stock
- 2 cups (plus 1 cup) water
- Place all ingredients in a crock pot (except for the remaining 1 cup of water)
- cover and set on low for 8 hours
- once finished cooking, add in 1 cup of water and puree with an immersion blender until almost smooth.

You’re right. It IS all about balance. That salad looks positively gorgeous and filling. I think I need to have one for supper!

i think college ruined halloween for me..the parties get way too crowded with freshman lol i love november because i lOVE thanksgiving:)
