Monday’s Eats-Fig Butter Overnight Oats

I managed to take a picture of all my main meals today..go me!

have you ever tried Trader Joes Fig Butter

well its pretty darn good! especially with goat cheese and crackers. but I decided to test it out in my overnight oats this morning

not just any overnight oats

Fig Butter Overnight Oats

Serves One:


  • 1/3 cup rolled oats
  • 1/2 sliced banana
  • 1/3 cup plain greek yogurt
  • 1/2 cup unsweetened vanilla almond milk
  • 1/2 tbsp chia seeds (optional)
  • 1 tbsp fig butter (plus more for topping)
  • 1 pinch cinnamon


  1. Mix all ingredients together and store in the fridge overnight. Enjoy in the morning with some more fig butter or nut butter on top.


Lunch today was a beastly salad

in the massive bowl (that serves me, myself, and i)

  • mixed greens
  • cucumber
  • carrots
  • avcado
  • tomatoes
  • turkey
  • goat cheese
  • 1 egg over easy
  • salsa
  • sriracha sauce
such a good combo
have you ever tried these?
they are SO good. Jalapeno Jack Flavor! For 10 pretzel crisps its 110 calories and 3g of protein..not bad! 
Dinner tonight was a new recipe..I’m doing pretty good on my goal of trying new recipes this month!
Spicy Chicken Lettuce Wraps from Eat, Live, Run
these with definitely be a staple meal this easy and so amazing!
they were a little messy but nothing a few napkins can’t take care of :)
a delicious day of eats indeed!
time to go study for my quiz tomorrow
or watch episodes of Diners, Drive-Ins, and Dives
whichever i prefer..

I love that fig butter! Actually I love anything involving figs. They’re so good!

Haha watching Diners, Drive ins and Dives >>> studying. I seriously watch that show everyday. :P

Some of my delicious eats lately have been Ellie Kriegers sweet and spicy rubbed salmon with roasted veggies, heirloom tomato salad, turkey sausage hot dog with a slice of bread for the bun, and of course lots of oatmeal!

I have tried that fig butter before and it’s pretty tasty! I actually used it on a pizza with dried figs and gorgonzola cheese… yum!

mmm fig butter sounds good! Never even had a fig, but I need to! I am loving lately condiments..specifically honey mustard and hummus on everything!
