notice anything different around here..
I gave my blog a make over! Even though I wish I could take credit for the awesome design and graphics, Jenny who blogs at Peanut Butter and Jenny did the design for me!
I am still getting use to blogging on a self-hosted platform so bare with me as I get things going!
but onto some thoughts/food/etc from the weekend!
I bought the whole wheat pizza dough from Trader Joes and made a pizza with caramelized onions, mushrooms, goat cheese, and mozzarella cheese
Friday I ate two pieces of leftover pizza (cold) and then went to Zumba
not my wisest idea
i discovered the best. snack. ever.
trader joes honey goat cheese + trader joes fig butter + trader joes multigrain mini crackers
the only problem is now i’m out of the goat cheese (AHHH) ..I guess i need to make another Trader Joes road trip soon..and by road trip I mean that its 25 minutes away
lol.
My breakfast this morning: Trader Joes Oatmeal Flakes (if you haven’t tried these you should!), banana, peanut butter, and almond milk
we literally have no food..which is why I plan on going to the grocery store today..that along with cleaning, doing homework, working out, making dinner, going to chapter, and watching keeping up with kardashians

Meal Plan for the Week:
Before i go grocery shopping I always make a tentative meal plan for the week so I can base my grocery shopping off of it
so here’s the “plan” for the week that’s subject to change
Sunday: Thai Fried Quinoa w/ Shrimp
Monday: Spicy Chicken Lettuce Wraps
Tuesday: Out to Dinner
Wednesday: leftovers
Thursday: Roasted Vegetable Lasanga..I hope to share this recipe once I test it out!
Friday: leftovers
Saturday: ?
I normally plan on cooking about 3 times a week and leave the other days to either leftovers, or eating what we have on hand. (Which sometimes seems like nothing )
this week I need to do a better job of buying more vegetables to have on hand so my meals over the weekends aren’t all essentially brown..

The new design looks awesome! I love the header.
I have a similar approach to meal planning as you – I plan to make about 2-3 more complicated recipes per week and then make simpler meals on the rest of the days. I wish I had time to cook awesome dinners every night though!
