yesterday I woke up around 8:30, hung out in bed for about a half hour, and then made my way downstairs for breakfast
while I’m still adjusting to being home, it is really nice to wake up and not have a million things to do:)
my mom came back from her run with the dogs and brought me ice coffee and a bagel with homemade vegetable cream cheese for us to share. (yup shes the best I told ya!)
I also made some egg whites with spinach and a little shredded mozzarella cheese to go along side
my plan was to do 40 minutes on the exercise bike, but after 7 minutes on it I realized just how much I hate that thing!
so I looked to Pinterest for inspiration and completed this jumping jacks circuit
on days when I do cardio, I love doing high intensity intervals like this..I never get bored, the work out goes by fast, and I always feel like I got a really good workout in in a short amount of time!
I ate an apple on my way to my haircut which I failed to snap a picture of
after my haircut I went to Trader Joes, and by the time I came home I was more than ready for lunch!
I made a wrap with trader joes 3 layer hummus (which you MUST try NOW), turkey, leftover grilled veggies, and spinach
served alongside carrots..which I ate about 2 of..and for a sweet ending a piece of this
i can’t go to TJ’s without picking up a bar
a few hours later I was headed to my orientation for work and even though I wasn’t too hungry I figured I should eat a little something because I wouldn’t be home for a while
a tj’s lightly salted rice cake with a little peanut butter and a smear of this delicious stuff
so I must admit that half the reason why I was excited to go to Trader Joes was so I could get more of their pumpkin butter because I’m obsessed
and guess what..there was NO MORE PUMPKIN BUTTER. I almost started crying. but then I just fought back the tears and picked up a jar of this stuff instead
its pretty tasty. but its no pumpkin butter
5 of my best friends from home came over for dinner last night, and while I agreed to do the main course, we did the dinner sort of “pot luck” style and everyone brought over something
here are 3 of them, from left to right, Sam, Maya, and Molly
For starters, Maya brought over homemade guac, chips, and white wine to make white wine sangria
mmm so delish
for the main course I re-created the burger I had at a restaurant at my school not too long ago
Turkey Burgers with Cheddar Cheese, Bacon, Pineapple Chutney, and barbeque sauce
they turned out really good! I’ll be sharing the recipe soon!
i also made a big salad to go alongside
for dessert, Molly brought over a funfetti cake made from
a box scratch..:)
which I definitely took a few bites of..funfetti cake is just SO good
and Jackie brought over a nice big fruit salad which we all demolished
I went into a serious food coma
mainly because I couldn’t stop eating this fruit salad which put me over the edge
it was a fun, delicious night!
today I have my first day of training at 5, and until then I plan on working out, and maybe doing a little shopping:)
