just popping in to share what I just made for dinner
because its not like I should be studying for the exam I have tomorrow or anything..
so would you judge me if I have been dreaming of this dinner idea since like..last week?
first it started out with just green chile turkey burgers with grilled pineapple and maybe a few slices of avocado on top
but then a light bulb went off in my head
DING DING
and i created THIS
Grilled Pineapple Guacamole!

I wish I didn’t have to share any of this
however its the kind of thing that you want everyone to try, yet you wish you just had an endless supply all to yourself
so aside from trying to figure out how to hoard all of this to myself, here’s how you make it
Start off by grilling pineapple on a grill pan or regular grill
about 2 minutes per side is all it takes!
Then in a mixing bowl combine 2 tbsp diced cilantro, 3 tbsp diced tomato, 2 tbsp diced yellow onion, and the chopped up grilled pineapple
Next add in 2 whole avocados chopped up and the juice from 1/2 of a lime
Season with salt to taste and deVOUR
ugh.

Grilled Pineapple Guacamole
Servings: about 3 cups of guac
Ingredients:
- 10 slices of Pineapple
- 3 tbsp chopped tomato
- 2 tbsp cilantro, finely diced
- 2 tbsp yellow onion, finely diced
- 2 avocados, chopped
- lime juice, about 1/2 of a lime
- salt to taste
Instructions:
- In a non-stick grill pan sprayed with cooking spray, grill pineapple slices over med-high heat. About 1-2 minutes per side
- Once pineapple is grilled, roughly chop the pineapple and combine in a mixing bowl with tomato, onion, and cilantro.
- Add in chopped avocado and lime juice
- Season with salt to taste and serve.
Note: Great with grilled fish, turkey burgers, chips, by the spoonful..whichever you prefer

After eating a few spoonfuls I served the guacamole over a green chile turkey burger
I was going to share the recipe for the turkey burger as well but they turned out to be a little blah..I basically just added a can of diced green chiles to ground turkey meat with a few spices and grilled them.
Once I figure out how to make the turkey burgers more flavorful I’ll share the recipe
for now all you need is this guacamole
Actually I’m surprised my dinner didn’t just consist of a bowl of it..that would of been an excellent idea
