How has everyones Monday been? Mine has been extremely long!! And I just went to Calorie Killer at the gym..woof..it was brutal..but it the best way possible!
So I have to say getting back to healthy eating feels SO good..I even turned down free ice cream today..who am I?!
Anywho last night I made a favorite of mine and my roommates
I was planning on making spaghetti squash last night but they didn’t have any at my grocery store..LAME..but i’m glad I made this recipe again because I forgot how good it is!!
and side note..apparently today is National Peanut Butter and Jelly day!
I didn’t really celebrate but I did have peanut butter in my breakfast this morning!
Peanut butter and banana overnight oats!
oh how i missed you overnight oats!
in the mix:
- 1/3 cup rolled oats
- 1 cup almond milk
- 1 tbsp chia seeds
- 1/2 tbsp peanut butter
- 1 scoop vanilla protein powder
- 1 mashed banana
Placed in the fridge overnight and devoured this morning..I’m telling you my overnight oats were the ONLY thing getting me out of bed this morning! #sadbuttrue
And for dinner tonight I made a favorite of mine
I substituted frozen broccoli for peas because I forgot to pick them up at the store yesterday..but the broccoli is just as delicious!
i could seriously eat this quinoa dish every single night for dinner
you must must try it!
