Eating healthy feels so good

Hi!

How has everyones Monday been? Mine has been extremely long!! And I just went to Calorie Killer at the gym..woof..it was brutal..but it the best way possible!

So I have to say getting back to healthy eating feels SO good..I even turned down free ice cream today..who am I?!

Anywho last night I made a favorite of mine and my roommates

roasted butternut squash and goat cheese pasta

I was planning on making spaghetti squash last night but they didn’t have any at my grocery store..LAME..but i’m glad I made this recipe again because I forgot how good it is!!

and side note..apparently today is National Peanut Butter and Jelly day!

I didn’t really celebrate but I did have peanut butter in my breakfast this morning!

Peanut butter and banana overnight oats!

oh how i missed you overnight oats!

in the mix:

  • 1/3 cup rolled oats
  • 1 cup almond milk
  • 1 tbsp chia seeds
  • 1/2 tbsp peanut butter
  • 1 scoop vanilla protein powder
  • 1 mashed banana

Placed in the fridge overnight and devoured this morning..I’m telling you my overnight oats were the ONLY thing getting me out of bed this morning! #sadbuttrue

And for dinner tonight I made a favorite of mine

Thai Fried Quinoa!

I substituted frozen broccoli for peas because I forgot to pick them up at the store yesterday..but the broccoli is just as delicious!

i could seriously eat this quinoa dish every single night for dinner

you must must try it!

alrighty time to go quickly shower and go to a sorority meeting!

Question for ya!: Did you celebrate national pb and jelly day?

not me..i’m more a fan of plain pb:) Although I do love my pb and jelly overnight oats!

Mmm that quinoa dish does sound excellent and yes,…. eating healthy feels amazing and of course tastes great :)
I didn’t know it was national pb and jelly day! Now that I know I might have to change my dinner plans around haha

I’ve never made overnight oats without Greek yogurt. I need to try, I miss overnight oats!

Wow that butternut squash dish looks beyond tasty!! I totally know what you mean about healthy eating, it just makes you feel like a million bucks :)

I love pb, cinnamon, and honey sandwiches on fresh thick whole wheat bread! So I definitely “celebrated” with one of those today :P I need butternut squash & goat cheese pasta in my life! That just sounds too good.

I really need to get back to eating healthy. Once I get in a bad habit rut, it’s so hard to get out. My tighter clothes are encouraging me though lol
