How is everyone on this lovely morning? I’ve been up since 6:30 and had dance rehearsal from 7-9 so I feel like its half way through the day already
too bad its only 9:30..
But anywho I wanted to tell you about last nights dinner!
Recently I bought 2 packages of frozen fish fillets from Target
I bought the tilapia and the salmon fillets..I was nervous about buying these because I always feel like frozen fish products can taste too “fishy” ..but I’m happy to say these are great!!
For college students this is a perfect way to add fish to your diet without spending too much money and going through too much effort to prepare it..(each box was about $3.50 and it comes with 2 small fillets)
So last night I roasted sweet potatoes, and asparagus with a little olive oil, salt, and pepper
the fish had to cook at 400 degrees F for 25 minutes so I just cooked the sweet potatoes and asparagus at that same temp for the same about of time
ta da! The fish had a lemony flavor too it..so good! And each fish fillet is only 90 calories! I added some barbecue sauce for dipping!
I’ll probably be having the same thing for dinner tonight..convenience at its best!
And for breakfast this morning I used some of the leftover asparagus to make a delicious Asparagus, spinach, and goat cheese egg white omelet
Not to toot my own horn but I’ve become pretty damn good at making omelets (Shout out to my omelet master roommate Sonny I know you’d be proud:)
SO good..goat cheese is a must in every single omelet..just saying
Alrighty time to go study for my Stat exam tomorrow WOO HOO
oh and happy first day of spring!!
Question for ya!: What is your favorite prepared frozen food product to buy?
I am loving these fish fillets, but frozen veggie burgers are a must!
