Fried Quinoa-A take on Fried Rice

One of my favorite meals to whip up in less than 20 minutes is fried rice. Stir frys, and fried rice are so easy, and yet so delicious and satisfying. I tried a different version using Quinoa, and it turned out to be an awesome subsitution.

First saute some diced ginger root, garlic, and scallions

Then add in veggies of choice, (you can use either fresh or frozen), for this I used about 1 cup defrosted edamame, and 1 cup defrosted veggies. I also like to add some canned diced pineapple.

Then add in the soy sauce, and red chili paste

This stuff is AWESOME

Crack an egg in the center

Scramble and mix all together. YUM

Fried Quinoa

2 full servings (or 4 side servings)

1/2 cup dried Quinoa

1 tbsp chopped fresh ginger root (or could sub. 1 tsp ground ginger)

1 garlic clove, chopped

2 tbsp chopped scallions

1 20z can Pineapple

2 cups fresh or frozen stir fry vegetables

1/4 cup soy sauce

2 tbsp Red Chili Paste

1 Egg


Instructions: Cook quinoa according to package instructions. Heat a pan over high heat and sautee ginger, garlic, and scallions for 3 minutes. Add in veggies and saute for 2 more minutes. Then add in cooked quinoa, pineapple, soy sauce, and chili paste and mix to combine. Allow to cook for a few minutes, and then create a well in the center of the pan. Crack an egg into the well and scramble egg. Stir everything together, making sure egg is cooked through, and then serve!
