My favorite muffin of all time is a good Morning Glory Muffin! So I decided why not turn it into my favorite breakfast food, oatmeal!
Here’s the line up:
Almond milk, raisins, oats, ground cinnamon, vanilla extract, vanilla protein powder (optional), shredded carrots, 1 apple (note I would have also liked to add grated zucchini but my grocery store was all out of zucchini! I know. it’s a crime)
First add your apple, carrots, raisins, cinnamon, protein power, and vanilla extra to the pan and cook for about 3 minutes
Then add your oats, along with 2/3 cup water and 1/3 cup almond milk
Cook for about 5 minutes, and then pour in a bowl and refrigerate overnight
Either heat up the oats the next morning, or eat them cold with lots of yummy toppings like I do!
Shredded unsweetened coconut
Almond butter (obvs)
and This AMAZING granola
I found this at my local Pathmark. It’s seriously so good and really addicting!
but back to the oatmeal..
this was so amazing. it tasted just like a morning glory muffin, but in oatmeal form. The apple made these oats super voluminous, and the carrot provided a nice healthy sweetness!
I WILL be making these again. maybe for breakfast tomorrow?

Morning Glory Overnight Oats!
Serving Size: 1 LARGE portion
Ingredients:
1/3 cup old-fashioned rolled oats
1/8 cup raisins
1 apple chopped
1/4 cup shredded carrot and zucchini (or just one or the other)
1 tbsp vanilla protein powder (optional)
1/2 tsp vanilla extract
1/2 tsp ground cinnamon
1/3 cup almond milk
2/3 cup water
Optional Toppings:
Shredded coconut (sweetened or unsweetened)
Nut butter
Granola
Toasted Nuts
Dried cranberries
Instructions:
Combine chopped apple, carrot, raisins, vanilla extract, protein powder, and cinnamon in a pan and cook for about 3 minutes. Then add in your oats, almond milk, and water and cook on low for 5 minutes. Transfer to a bowl and refrigerate overnight. Then eat cold or heat up and enjoy! Toppings aren’t necessary but are highly recommended
